Aji Amarillo Chilli Paste

The bright yellow Aji Amarillo chilli is a core ingredient in Peruvian cuisine. This paste concentrates their natural fresh flavour, retaining a kick of heat to accompany a delightful mango-esque top note.

The chillies in this jar are premium Aji Amarillo's grown in Peru.  The chillies are lightly fermented and deseeded, then lightly reduced into a paste to concentrate flavour.  All of our pastes are finished with a dash of organic apple cider vinegar and sea salt to round off the flavour profile.
