Scotch Bonnet chillies, originating in Jamaica, are widely used in the Caribbean and parts of Africa. Fiery, fruity and fragrant, it is a close cousin of the Habanero.
Our Scotch Bonnet paste is made with first class fres scotch bonnet chillies of mixed ripeness. The chillies are lightly fermented, then sieved to remove the hot seeds and reduced by hand into a luxuriously thick, velvety paste. This process allows our pastes to concentrate the most flavour and avoid washing out the taste profile with the piquancy of the seeds. The paste is still very hot; you rarely need more than half a teaspoon.
All of our pastes are finished with a dash of organic apple cider vinegar and sea salt to round off the flavour profile.
Be creative! Include this paste in a jerk marinade, jollof rice, stews and sauces. Use sparingly.
